Founded by award-winning hospitality executive and wine/beverage professional Ranon (Ron) Balter, Eroica brings more than 25 years of executive leadership across fine dining, multi-unit restaurant operations, beverage program development, wine importing, distribution, brand marketing, and hospitality consulting. Throughout his career, Ron has overseen nationally recognized beverage programs, managed complex restaurant operations, developed award-winning wine and cocktail lists, led new restaurant openings, and advised organizations on operational excellence, profitability, and long-term growth.

Our philosophy is simple: every beverage program should reflect the identity of the business it serves. Whether developing a world-class wine list, a simple beverage program, optimizing a cocktail list, training service teams, sourcing products, or advising on new concepts, we combine practical operational experience with a deep understanding of wine, spirits, hospitality, and guest engagement.
